Ayam Goreng Kalasan

Supaya bumbu meresap, masukkan ke kulkas semalaman. Kalau pakai panci ISA dan klakat ISA (hasil akhir: bumbu ga kebuang tapi berair) kukus kurang lebih 30-45 menit, air kelapa tidak usah digunakan.

Ingredients:
Untuk ayam kampung 1 ekor.
Bawang putih 6 butir
Kemiri 5 butir
Ketumbar (sangrai dulu) 1 sdt
Merica 1/2 sdt
Jinten 1/2 sdt
Garam 1 sdt
Kunyit 6 cm
Lengkuas 3 cm
Gula merah 15 gram
Kapulaga 2 butir
Daun jeruk 4 lembar
Daun salam 2 lembar
Air kelapa 750 cc

Bumbu Labur Ayam Goreng :
Tepung sagu 100 gram
Garam 1/2 sdt
Telur 2 butir
Santan 150 cc

Directions:
– Haluskan semua bahan, kecuali air kelapa, daun salam dan daun jeruk
– Susun ayam di wajan dan masukkan bumbu ayam + daun jeruk + daun salam + air kelapa, masak dengan api kecil selama kurang lebih 1 jam.
– Biarkan ayam dalam panci minimal 1 jam. Angkat dan tiriskan.
– Ayam siap digoreng.

Bumbu Labur:
– Campur semua bahan, kocok sampai rata.
– Celupkan ayam yang telah dimasak ke dalam adonan. Angkat dan goreng dalam minyak panas.
